good eats!!


You know that I am married to an Italian.  Like I have said before that means FOOD. You also may know I am a type 1 diabetic so me and food are enemies. I am rare in the fact that my diabetes was recently diagnosed at age 34. Yes u can be a type 1 at 34 but it is very uncommon.
Anyways back to the food, one of my favorite easy dishes is antipasto. I love to make a large platter filled with meat, cheese and peppers, olives and sausage. we usually enjoy it outside with a good bottle of vino. You know that I am married to an Italian.  Like I have said before that means FOOD.



antipasto is something you can throw together in 10 mins. I just go to my local deli (fry's) and get thin slices of salami, prosciutto, hot cappy, cappy, pesto ham and provolone. I also gut up thin slices of Parmesan and then add peppers and olives from the olive bar they have there.

I like boar's head meat. I also make a salad and sausages to go with it. It is great meal for me because its low in carbs and low in fat. I also love it because it give Mr. loveletters and I a chance to slow down and communicate with each other.

TYPE 1

  I was going to post pics of the new coffee table .... but I just cant. I am all fired up about the ignorance around diabetes. 
I have been on pinterest and love looking at all the great pictures. Then I saw this....

and I just lost it.....

so today to put my heart to rest I am going to explain a few basic facts about diabetes.

type 1 (this is me)It is a condition resulting from the body’s inability to produce insulin. Insulin is a hormone that is needed to convert sugar (glucose), starches and other food into energy needed for daily life.
Only 5% of people with diabetes have this form of the disease.
 People with type 1 diabetes must treat their diabetes with insulin since their bodies do not naturally make any insulin.
so when people post thing like this
oreo stuffed brownies...aka diabetes in a bite.

Its soooo frustrating.  when people tell me .."dont worry hun, watch ur sugar intake and get a little more exercise and you will be fine."  I want to scream.!!@#$%

I dont eat white bread...i really dont eat bread. I never ever eat candy or anything sweet...but every morning i wake up and test and inject as needed. I do this because no amount of exercise or no Raw,vegan super food diet is going to make my pancreas work again.
I work very hard everyday to keep my sugars at "normal levels." 

so these comments...these comment are very offensive to us diabetics....to make such a complicated disease boil down to one bite of a brownie...is just ignorance!!!


sorry for the rant....promise i will get back to the LOVE..just had to get it off my chest..i am sure it wont be the last time...I plan on writting love letters to my grand babies...so I will keep on pricking and sticking,counting and FIGHTING!!

TYPE 1

My pledge
MY LOVES... Unfortunately you will grow up knowing your mom as a diabetic. I was diagnosed in feb right after my 34th birthday.  I had dropped about 15 pounds in two months and was up all night peeing and had a unquenchable thirst.  I went in and my a1c level was 15 at first diag. They had to hospitialize me for 3 days to rehydrate and get controll over my sugar levels.
You now know what the word means, how to alert people if i go low and what needles and insulin are. I am sorry this is how you will remember me....but determined to show you how to live life the best way possible....i Pledge to take care of myself to keep this

in check so that i may hold my beautiful grand-babies on day.



I am sorry that this is a term you will use when describing me on day. I am sorry for the fear in your eyes e when you are witness to my injections, or the worry you carry for me. ( you randomly ask if I remembered to take my insulin). I love you both for the everyday joy you bring me .
